Home-Made with PROP

Former Tratorria Giancarlo and College Street Bar runners the Carnevale family opened PROP (People's Republic of Pasta) in 2010 in the burgeoning scene of St. Clair West right near the Whychwood Barns.

As the name of the restaurant would indicate, PROP's speaciality is pasta and for our new Home-Made chef Giancarlo Carnivale shared his recipe for Fusili with Shiitake & Crimini Mushrooms.

Fusili w/ Shiitake & Crimini Mushrooms

makes 2 servings


4 cups of water
1 Tbl spoons of salt
2 cups of fusili pasta
3 Tbl spoons of oil
1/4 cup of red onion (chopped)
1/4 cup of crimini mushrooms (chopped)
1/4 cup of shiitake mushrooms (chopped)
3 Tbl spoons of cream
Pinch of black pepper
3 Tbl spoons of parmigiana cheese



- Bring water and salt to a boil
- Add pasta and cook until aldente


- Sautee onions and mushrooms in oil
- Add cream
- drain
- Add pasta, pepper and parmigiana
- Stir
- Serve
